- Roasting tea leaves: It is also found that roasting of the leaves can sublimate caffeine and thus releasing it into the air. Thus, leaves that are roasted have less caffeine as compared to the other ones.
- Aging: It is another factor that needs to be kept in mind. Aging the tea leaves can result in mellowing the flavor and it brings about a sweet, deep, and rich character in them. As per science, the bitter taste that you may find in the tea will always be due to the caffeine content in it, which because of aging it slowly transforms into a different chemical compound with a sweeter and milder flavor.
